Would a way to resolve how the tribe of Levi stood in the middle and and still leave 6 tribes on Gerizim be to consider that Joseph was represented by Manasseh and Ephraim? If I understand correctly, the blessings and curses related to the land they would inherit in Eretz Yisrael, and if Levi was not allotted a specific portion, and functioned as the Priest, he would receive either Blessings or curses depending on how well they performed their duties, which would be evident by how the other 12 acted upon arrival.
