Ingredients:
- 4 zucchinis
- ½ sweet onion
- 2 Tbsp. mozzarella cheese
- 3 Tbsp. parmesan cheese
- 2 eggs
- ¼ tsp. salt
- canola oil for frying
Directions:
- Grate the onion and zucchinis into a medium-sized bowl. Add the mozzarella, parmesan, eggs and salt. Mix to combine.
- Heat oil in a frying pan over medium-high heat. When oil is hot, drop spoonfuls of batter into the oil. Cook for 1-2 minutes on each side until outside is golden and inside is cooked through. Repeat until all batter has been fried. Serve immediately, with a sprinkle of parmesan cheese.
Yields: 10-12 latkes
