If the dough is allowed to sit for too long (18 minutes) without being kneaded, it can begin leavening. Reply

Sorry if it wasn't clear. Shmurah Matzah contains only flour made from wheat that has been watched from when it was growing in the field and water. Reply

The title of the video is wrong. It shows how hand Matzah is made, not how Shmurah Matzah is made. Reply
