Dough Ingredients:
- 1 cup flour
- ½ cup water
- 1 tbsp. oil
- 1 egg
- Pinch salt
Filling Ingredients:
- 1/3 cup brown sugar
- 1 cup chopped dates
- ½ cup dried cherries
- 1/3 cup coconut flakes
- 1 cup almonds
- 1 cup breadcrumbs
- 1 tsp. orange zest
Directions:
- Mix the dough ingredients together to form a smooth ball.
- Roll the dough out very thinly and brush with oil.
- Sprinkle the brown sugar over the first third of the dough.
- Mix the dried fruits, coconut, nuts and zest together. Spoon over the brown sugar.
- Roll tightly, tucking in the edges.
- Bake for 30 minutes at 400°F.
- Allow to cool slightly, then cut into neat slices using a sharp knife.
- Serve warm or at room temperature. Sprinkle with confectioners sugar.

Dough recipe is not good, the whole sticky mess stuck to my board and made what sounded like an easy recipe, a Tu B' Shevat disaster. I added at least 3/4 C more flour and still couldn't roll it out thin enough without it sticking to everything. Also the filling was twice as much as could fit onto this dough. I had to smooth one layer of dough over half the filling to even get it into the pan for the oven and was glad I used parchment paper because the brown sugar seeped out all over the place!
