Ingredients:
- 2 cups flour
- ½ tsp. salt
- ½ cup water
- 4 tbsp. olive oil
- 4 apples, diced
- 50 grams raisins
- 50 grams pine nuts
- 60 grams brown sugar
- ½ tsp. cinnamon
- ½ tsp. vanilla
- Butter
- Breadcrumbs
- 2 egg yolks
Directions
- Mix the flour, salt, water and 3 tbsp. olive oil, until mixture forms a ball. Set aside.
- Cook the diced apples in 1 tbsp. olive oil. Add the raisins, pine nuts, brown sugar, cinnamon and vanilla.
- Roll out the dough very thinly. Spread a layer of butter down one side. Sprinkle with breadcrumbs and then spoon the apple filling on top.
- Roll up tightly and transfer to a baking sheet lined with parchment paper.
- Mix the two yolks together in a small bowl and brush over the pastry.
- Bake at 350°F for 45 minutes. Slice and serve.
