Ingredients:

  • 2 cups flour
  • ½ tsp. salt
  • ½ cup water
  • 4 tbsp. olive oil
  • 4 apples, diced
  • 50 grams raisins
  • 50 grams pine nuts
  • 60 grams brown sugar
  • ½ tsp. cinnamon
  • ½ tsp. vanilla
  • Butter
  • Breadcrumbs
  • 2 egg yolks

Directions

  1. Mix the flour, salt, water and 3 tbsp. olive oil, until mixture forms a ball. Set aside.
  2. Cook the diced apples in 1 tbsp. olive oil. Add the raisins, pine nuts, brown sugar, cinnamon and vanilla.
  3. Roll out the dough very thinly. Spread a layer of butter down one side. Sprinkle with breadcrumbs and then spoon the apple filling on top.
  4. Roll up tightly and transfer to a baking sheet lined with parchment paper.
  5. Mix the two yolks together in a small bowl and brush over the pastry.
  6. Bake at 350°F for 45 minutes. Slice and serve.
