Meatball Ingredients:
- 20 oz. (500 grams) ground beef
- ½ onion, grated
- 10 oz. (300 grams) beetroot, grated
- Salt
- Pepper
- 2 tbsp. oil
Directions:
- Add the salt, pepper, grated onion and grated beet to the ground meat. Mix until just combined.
- Roll into balls.
- Heat oil in a skillet and brown meatballs on both sides.
Sauce Ingredients:
- 1 onion, sliced
- 1 carrot, julienned
- 3.5 oz. (100 grams) beetroot, julienned
- 2 tbsp. oil
- 2 tbsp. tomato paste
- ½ cup boiling water
- Salt
Directions:
- Heat oil in a skillet. Add onions, cook for a few minutes. Then add the carrots and beets and sauté another few minutes.
- Add the tomato paste, salt and water and bring to a boil. Add the meatballs, and simmer for 30 minutes until meatballs are cooked through.
