Meatball Ingredients:

  • 20 oz. (500 grams) ground beef
  • ½ onion, grated
  • 10 oz. (300 grams) beetroot, grated
  • Salt
  • Pepper
  • 2 tbsp. oil

Directions:

  1. Add the salt, pepper, grated onion and grated beet to the ground meat. Mix until just combined.
  2. Roll into balls.
  3. Heat oil in a skillet and brown meatballs on both sides.

Sauce Ingredients:

  • 1 onion, sliced
  • 1 carrot, julienned
  • 3.5 oz. (100 grams) beetroot, julienned
  • 2 tbsp. oil
  • 2 tbsp. tomato paste
  • ½ cup boiling water
  • Salt

Directions:

  1. Heat oil in a skillet. Add onions, cook for a few minutes. Then add the carrots and beets and sauté another few minutes.
  2. Add the tomato paste, salt and water and bring to a boil. Add the meatballs, and simmer for 30 minutes until meatballs are cooked through.
