• 2 pounds turkey, cut in large cubes, plus skin
  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 1 tsp cumin
  • 2 bay leaves
  • 4 cloves garlic, peeled and crushed
  • optional: 1/8 tsp cayenne


  1. Put all ingredients in a stew pot. Add enough water to just barely cover the turkey.
  2. Bring to a boil, then reduce to a simmer. Simmer uncovered 2 hours without stirring.
  3. Bring heat back up to medium high for 45 minutes so that the liquid cooks off, stirring to keep the meat from sticking.
  4. When the fat from the meat starts to sizzle on the bottom of the pot, let the meat brown in it.
  5. Serve in corn tortillas with things like pickled jalapenos, olives, avocado slices, fresh cilantro, onion, slaw.
