Ingredients:
- 2 pounds turkey, cut in large cubes, plus skin
- 1/2 cup orange juice
- 1/4 cup lime juice
- 1 tsp cumin
- 2 bay leaves
- 4 cloves garlic, peeled and crushed
- optional: 1/8 tsp cayenne
Directions:
- Put all ingredients in a stew pot. Add enough water to just barely cover the turkey.
- Bring to a boil, then reduce to a simmer. Simmer uncovered 2 hours without stirring.
- Bring heat back up to medium high for 45 minutes so that the liquid cooks off, stirring to keep the meat from sticking.
- When the fat from the meat starts to sizzle on the bottom of the pot, let the meat brown in it.
- Serve in corn tortillas with things like pickled jalapenos, olives, avocado slices, fresh cilantro, onion, slaw.
