What is a wonder baker, I have not heard of this. Can the recipes that state to use this, be used in a cake pan in the oven.

I was unable to get cake meal or potato starch for my Passover sponge cake recipe.
Is matza meal the same as cake meal? If not what could I use in place of cake meal and potato starch?
Also could I exchange flour in the recipe for after Passover for the cake meal, and baking powder in place of potato starch?
Please help, I'm trying to start baking for the first time since my parents passed away.
Matzah meal is a courser grind than the finer matza cake meal. Ideally, only the potato starch is used, as this would keep the final product, "non-gebrokts", meaning no matzah was used in it's making. Yes, for non Passover year round use, flour can substitute the cake meal. Baking powder is not a substitute for potato starch.

Leavening in Passover baking?! Baking soda and baking powder are chemical leaveners. Technically OK for Passover but, to me, using or consuming them is not in keeping with the spirit of the holiday in which we eat no leavened foods.

No, Ashkenazi Jews cannot eat rice on Pesach.
Some Sephardic Jews may do so but it needs to be checked several times and certified Kosher for Pesach.

There really isn't much you can use for "self-rising" since Pesach is not about elevating. However, you may want to whip egg whites at room temperature and add sugar to get a meringue that you can fold into a batter to give some rise.
Pure baking soda in a new container can be used for baking on Passover, along with a permissible flour such as potato starch or matzah meal that is certified Kosher for Passover. Baking powder with Kosher for Passover certification can be used as well.
This does not seem appropriate at all. Where is this option approved or authorized?

I don't understand it, either. Baking soda and baking powder "puff up" and make foods "rise", like yeast. But I saw a "Kosher for Pesach" brownie mix at the grocery store, and it had baking soda as an ingredient. I didn't buy it but I don't understand how its "Kosher for Pesach"?
