Ingredients
- 6 eggs, separated
- 1 cup sugar
- 3 Tbsps. honey
- 3 Tbsps. strong black coffee
- 2 Tbsps. oil
- 1 tsp cinnamon
- 3 cloves, crushed (optional)
- 1 Tbsp brandy
- 1 1/4 cups flour
- 1 1/2 tsps. baking powder
Directions
Preheat oven to 350.
In a small mixer bowl beat egg whites with 1/2 cup sugar untill stiff but not dry and set aside.
In a separate bowl, cream egg yolks and 1/2 cup sugar. Add honey, coffee, oil, cinnamon, cloves and brandy. Beat until thick and light in color.
With a spatula, fold in flour and baking powder until well blended. Then fold in egg whites gently and carefully until well blended. Pour into ungreased tube pan. Bake for 1 hour. When done immediately invert on soda bottle. Cool at least 3 hours before removing so that cake will not fall. When cool, loosen edges and remove cake from pan.
USE: 10-inch tube pan
YIELDS: 1 cake

inverting on a soda bottle i've seen my mom do the inverting trick a few times. this only works if you're using the pan with the hole in the middle - i think it's called the angel food cake pan. would be best if you have a helper. make sure you have oven mitts for both hands for everyone helping.
*find a clear surface where the cake can rest while it's upside down. i like to choose the area beside the oven so the cake can lean against the wall/oven a bit.
*my mom uses an empty glass coca cola bottle and put it on top of on a dinner plate (counter surface can be slippery with glass)
*she take the cake out of the oven, holds it by the sides, and flip it upside down.
*at this point, i am holding the bottle still which is position in the middle of the plate
*insert the top of the coca cola bottle into the middle hold of the pan.
*now balance the cake on bottle. feel free to lean the cake against the wall and oven a bit.
