• 2 lb cooked beets (you can use the pre-cooked vacuum packed ones)
  • ½ small onion, finely diced
  • ¼ cup loosely packed chopped dill
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp kosher salt


Cut the beets in the size and shape of your choice. Dice the onion as finely as possible. Chop the dill roughly. Mix all ingredients together, and marinate in the fridge overnight before serving. Last a week in the fridge.
