Ingredients

  • 2 cups sugar
  • ¾ cup oil
  • 4 eggs
  • ¾ cup non-dairy milk
  • 2 cups flour
  • 2 tsp. baking powder
  • ½ tsp. kosher salt
  • ¼ cup vodka
  • ¼ cup amaretto
  • 1 packet (80 grams/2.8 oz) instant vanilla pudding powder
  • 10-12 frozen strawberries

Directions

  1. Pre-heat oven to 350°F/180°C.
  2. Cream the sugar and oil. Add the eggs one at a time, mixing after each addition.
  3. Add the non-dairy milk and the flour, baking powder, and salt. Mix until just incorporated.
  4. Add the vodka, amaretto, and instant vanilla pudding. Mix until smooth. Batter will be thin.
  5. Line a 9x13 baking dish with parchment paper. Spread the strawberries across the bottom of the pan. Carefully pour the cake batter over the strawberries.
  6. Bake at 350°F/180°C for 45-50 minutes. Serve warm, if possible.
