Serves: 4-6


  • ¼ cup of olive oil
  • ¾ cup fresh lime juice
  • 1 tbsp. finely chopped fresh cilantro
  • 1 small jalapeño, stemmed, seeded and finely chopped
  • 1 teaspoon chopped garlic
  • 4-6 fillets of sole
  • salt
  • 2 tbsp. vegetable oil


  1. In a mixing bowl, combine oil, lime juice, cilantro, jalapeño and garlic. Whisk until smooth.
  2. Season the fish with salt. Add the fish to the marinade and coat each side well. Cover with plastic wrap and refrigerate for one hour.
  3. Fry the fish in oil until golden brown, about 4 to 6 minutes on each side. Remove and drain on paper towels. Season with salt and pepper.
