Ingredients

  • 2 large eggplants, cut into ½-inch slices
  • ½ cup olive oil
  • 1 onion, diced
  • 1 can diced tomatoes
  • 4 cloves garlic
  • ½ cup fresh cilantro

Directions

  1. Fry eggplant slices in olive oil until crispy.
  2. Sauté onion and garlic for 2-3 minutes until soft.
  3. Add diced tomatoes and cilantro.
  4. Simmer for 10 minutes.
  5. Add eggplant and simmer for 10 more minutes.
