Ingredients
- 2 large eggplants, cut into ½-inch slices
- ½ cup olive oil
- 1 onion, diced
- 1 can diced tomatoes
- 4 cloves garlic
- ½ cup fresh cilantro
Directions
- Fry eggplant slices in olive oil until crispy.
- Sauté onion and garlic for 2-3 minutes until soft.
- Add diced tomatoes and cilantro.
- Simmer for 10 minutes.
- Add eggplant and simmer for 10 more minutes.
