Potatoes:

  • 16 oz. mini potatoes
  • 3 tbsp. olive oil
  • sea salt

Chicken:

  • 4 chicken breasts
  • ½ cup olive oil
  • ¾ cup parsley
  • ¾ cup cilantro
  • 4 cloves garlic
  • ½ tsp. sea salt

Peppers:

  • 15 - 20 mini peppers
  • 2 tbsp. olive oil
  • sea salt

Directions:

  1. Pre-heat oven to 400°F.
  2. Spread the potatoes out on a baking pan, drizzle with oil and salt and bake for 30 minutes.
  3. Mince the parsley, cilantro and garlic. Add the salt and olive oil and mix. Smother each piece of chicken in the herb mixture.
  4. After the potatoes have cooked for 30 minutes, remove the pan, push the potatoes to one side, add the chicken and return to the oven for 20 minutes.
  5. Remove the pan from the oven, add the peppers, drizzle with oil and sprinkle with salt and return to the oven for another 10 minutes.
