Potatoes:
- 16 oz. mini potatoes
- 3 tbsp. olive oil
- sea salt
Chicken:
- 4 chicken breasts
- ½ cup olive oil
- ¾ cup parsley
- ¾ cup cilantro
- 4 cloves garlic
- ½ tsp. sea salt
Peppers:
- 15 - 20 mini peppers
- 2 tbsp. olive oil
- sea salt
Directions:
- Pre-heat oven to 400°F.
- Spread the potatoes out on a baking pan, drizzle with oil and salt and bake for 30 minutes.
- Mince the parsley, cilantro and garlic. Add the salt and olive oil and mix. Smother each piece of chicken in the herb mixture.
- After the potatoes have cooked for 30 minutes, remove the pan, push the potatoes to one side, add the chicken and return to the oven for 20 minutes.
- Remove the pan from the oven, add the peppers, drizzle with oil and sprinkle with salt and return to the oven for another 10 minutes.
