Ingredients:
- 1 lb. carrots
- 3 tbsp. oil, divided
- ½ cup honey
- ½ onion, diced
- ¼ cup raisins
- ¼ cup golden raisins
- 6 dates
- Sea salt
Directions:
- Peel and slice the carrots into sticks. Toss the carrots with the honey, 2 tbsp. oil and sprinkle with sea salt. Spread the carrot sticks out over a baking pan, cover with foil and bake at 375°F for 40 minutes. Increase oven temperature to 425°F, uncover the carrots and bake for another 30 minutes. Transfer carrots to a serving dish.
- Heat frying pan, add 1 tbsp. oil, onions, a sprinkle of sea salt, and sauté until the onions are golden in color. Add the raisins and dates and cook until the fruit is soft—about 5 minutes. Spoon mixture over carrots and serve warm.
