• 6 bananas
  • 6 apples (3 red, 3 green)
  • 1 fresh pineapple
  • 2 oranges
  • 1 pound seedless grapes (Use both red and green if you're going for a more colorful salad)
  • 2 tablespoons fresh mint, washed, drained and minced
  • 2 tablespoons fresh tarragon, washed, drained and minced


  1. 1 1/2 teaspoons flour
  2. 1/2 cup sugar
  3. 1/2 cup water
  4. 1/2 cup lemon juice
  5. 1/4 cup pineapple juice (feel free to drink the rest of the can)
  6. Juice of one orange


  1. Peel bananas. Halve and core apples. Trim top and bottom off pineapple, core and peel. Peel oranges and separate into sections. Remove grapes from the stems.
  2. Cut bananas, apples, and pineapple into one-inch chunks and put into a large mixing bowl, along with remaining fruit and herbs.
  3. Cook dressing ingredients over medium heat until thick. Cool and pour over salad. Gently toss to coat. Refrigerate any leftovers.
