This is my father's recipe of how to make fast and easy baked potatoes—simply a delicious must-try dish.
Ingredients:
- 1 (1.5 lb.) bag of mini (golden or red) potatoes
- 30 ml olive oil
- 3 pinches of parsley
- Salt to taste
Directions:
- Wash the mini potatoes well under warm water. Cut each mini potato in half and toss into an oven-safe bowl.
- Pour the olive oil into the bowl. Add salt to taste and sprinkle 3 pinches of parsley over the mini potatoes.
- Close the bowl with a cover and shake, making sure the oil spreads all over the potatoes well enough so that it gets mixed together. Remove the cover and cover the bowl with foil.
- Bake on 380°F for 45 minutes.
