This is my father's recipe of how to make fast and easy baked potatoes—simply a delicious must-try dish.


  • 1 (1.5 lb.) bag of mini (golden or red) potatoes
  • 30 ml olive oil
  • 3 pinches of parsley
  • Salt to taste


  1. Wash the mini potatoes well under warm water. Cut each mini potato in half and toss into an oven-safe bowl.
  2. Pour the olive oil into the bowl. Add salt to taste and sprinkle 3 pinches of parsley over the mini potatoes.
  3. Close the bowl with a cover and shake, making sure the oil spreads all over the potatoes well enough so that it gets mixed together. Remove the cover and cover the bowl with foil.
  4. Bake on 380°F for 45 minutes.
