• 2 pitas
  • 2 tablespoons Greek oregano
  • 4 oz. pizza sauce
  • 1 cup mozzarella cheese, grated
  • 1/2 tablespoon olive oil
  • Salt and pepper to taste

Toppings (optional):

  • Canned olives, halved
  • Anchovies
  • Sun-dried tomatoes
  • Peppers
  • Onions


  1. Preheat oven to 350.
  2. Spray a baking pan with canola oil spray.
  3. Brush olive oil on pitas and sprinkle with fresh-ground pepper and course kosher sea salt.
  4. Spread sauce on pitas, but make sure to stop at 1 inch from the crust (This way you can taste and see the olive oil.) Don't overdo it, or your baking pan will be a big mess.
  5. Apply cheese as liberally as you like. Crush the oregano to a fine powder by hand and sprinkle on cheese.
  6. Bake at 350 until cheese is golden-brown and bubbly. Yum!
