This fish is a light and healthy way to balance the heavy holiday meals.


  • 3 fillets sea bass defrosted/ fresh
  • 1 tbsp. olive oil
  • Juice and zest of 1 lemon, plus one lemon sliced
  • 1/4 cup golden raisins
  • 4 stalks fresh thyme
  • Coarse salt
  • Red pepper flakes


  1. Heat the olive oil in a pan and add the lemon zest, juice, raisins.
  2. Sprinkle salt a little red pepper on the fish.
  3. Place the thyme and lemon slices in the sauce and the fish fillets on top.
  4. Cover and steam for 5-7 minutes on low simmer until the fish is firm to the touch.
