A healthier alternative to mashed potatoes.


  • 6 medium parsnips, roughly chopped
  • 1 large onion, diced
  • 6 mushrooms, diced
  • 5 tbsp. canola oil
  • 1 tbsp. margarine
  • Salt and Pepper


  1. Put parsnips in large pot, cover with water, boil until parsnips are very soft, strain and set aside
  2. Sauté onions and mushrooms in canola oil until brown, and set aside
  3. Mash parsnips and add margarine, mushrooms and onions
  4. Season with salt and pepper to taste
