A healthier alternative to mashed potatoes.
Ingredients
- 6 medium parsnips, roughly chopped
- 1 large onion, diced
- 6 mushrooms, diced
- 5 tbsp. canola oil
- 1 tbsp. margarine
- Salt and Pepper
Directions
- Put parsnips in large pot, cover with water, boil until parsnips are very soft, strain and set aside
- Sauté onions and mushrooms in canola oil until brown, and set aside
- Mash parsnips and add margarine, mushrooms and onions
- Season with salt and pepper to taste
