Ingredients

  • 3 medium-sized fresh beets
  • 2 canned peach halves
  • 1 ripe pear, cut into small chunks
  • ¼ cup golden raisins
  • ½ of a very small red onion, sliced
  • ½ cup orange juice

Directions

  1. Peel and cut every beet into four pieces. Place them in a pot and cover them with water. Turn on the flame. Boil them for 40 minutes until they are soft. Allow to cool.
  2. Shred the beets in the food processor. Drain off most, but not all, of their juice. Add the rest of the ingredients and mix together.
  3. Refrigerate for several hours before serving.

Tips: Beets shred better when they have first been refrigerated several hours or overnight, after being cooked. Also, it’s a very good idea to wear disposable gloves and an apron when working with beets – they stain quite a bit!
