Ingredients
- 3 medium-sized fresh beets
- 2 canned peach halves
- 1 ripe pear, cut into small chunks
- ¼ cup golden raisins
- ½ of a very small red onion, sliced
- ½ cup orange juice
Directions
- Peel and cut every beet into four pieces. Place them in a pot and cover them with water. Turn on the flame. Boil them for 40 minutes until they are soft. Allow to cool.
- Shred the beets in the food processor. Drain off most, but not all, of their juice. Add the rest of the ingredients and mix together.
- Refrigerate for several hours before serving.
Tips: Beets shred better when they have first been refrigerated several hours or overnight, after being cooked. Also, it’s a very good idea to wear disposable gloves and an apron when working with beets – they stain quite a bit!
