I spent 40 years working outside the home. The Holidays used to pose a challenge until I started cooking brisket in the microwave. Over the years, many Brisket Mavens had no idea my brisket cooked in less than 1 hour. Here's how. . .


  • 3 lb brisket (seasoned with paprika, garlic and onion powder)
  • 1 envelope onion soup
  • 3/4 cup ketchup
  • 2 thinly sliced onions
  • 8 oz mini carrots
  • 1 14 oz can diced tomatoes (including liquid)
  • 3/4 cup water
  • Water to cover the brisket


  1. Place onions and carrots in the bottom of a large, deep Pyrex dish.
  2. Mix onion soup, ketchup, tomatoes and 3/4 cup water, set aside.
  3. Add Brisket to dish and pour tomato, ketchup, soup, water mixture over brisket.
  4. Add additional water to cover brisket. Cover dish (wrap or glass cover).
  5. Microwave on high for 25 mins, remove from oven and turn brisket.
  6. Repeat process, add more vegetables and water if desired.
  7. Best results cook 1-2 days before serving. When cool, slice and return to dish. (If you want to conduct a taste test, heat the brisket and gravy in the oven before serving.)
