Salad Ingredients:

  • 6 heads baby bok choy
  • 4 scallions
  • Slivered almonds

  • 2 tablespoons peanut butter
  • 1 cup oil
  • 1/2 cup vinegar
  • 1/2 sugar
  • 1 tablespoon soy sauce


  1. Slice the baby bok choy into narrow strips.
  2. Slice the green part of the scallions and toss them with the bok choy.
  3. Blend all dressing ingredients until creamy. If you don't have a blender, start with the peanut butter and slowly add the oil a little at a time, mixing in one direction, the mixture is smooth. Alternate adding the sugar and vinegar, still mixing in only one direction. Add the soy sauce, and pour over salad or refrigerate for later use.
  4. Top with slivered almonds.
