Hank’s mother called this “Apple Betty” or “Brown Betty”. Hank’s favorite. Good for breakfast and dessert too.


  • 6 slices soft whole wheat bread, torn in pieces
  • ½ cup raisins
  • 2 apples, thinly sliced
  • 4 egg whites
  • ½ cup organic sugar
  • 2 cups plain soymilk or skim milk
  • 1 tablespoon vanilla
  • Cinnamon and/or nutmeg (optional)


Spray a 9” x 9” pan with extra virgin olive oil. Combine the bread cubes, raisins and apples. Place in oiled pan. Beat the egg whites, sugar, milk and vanilla and pour over all. Sprinkle with cinnamon and/or nutmeg if desired. Bake in a preheated 350 degree oven for 45 minutes or until a knife placed in the center comes out clean.

You can make lots of variations with bread pudding. Try apricots, goji berries, other dried fruits or chocolate chips instead of raisins. Turn a plain bread pudding into a fancy dessert by topping it with fat free ice cream, fat free frozen yogurt or soy ice cream. Good warm or at room temperature.
