I love making my own pasta sauce and using the pressure cooker makes it so much faster.

  • 2 tablespoons onion, finely chopped
  • 1 clove garlic, minced
  • 3 cups crushed canned tomato
  • 2 tablespoons tomato paste
  • Salt and freshly ground pepper
  • 2 tsp. basil
  • 1 tsp. oregano
  • 1 tbs minced parsley
  • ½ bay leaf
  • ¼ cup dry red wine

1. Heat the oil in the cooker and sauté the onion and garlic until they are softened. Add all the remaining ingredients.

2. Close the cover and bring to pressure, cook for 20 minutes on high, reduce the pressure and remove the lid. Adjust seasoning to taste and if you want it to be thicker cook on high until it reduces.
