David Mintz, inventor of Tofutti, was almost ready to throw in the towel in his search for an edible and convincing non-dairy ice cream.

According to The Jewish Standard, which profiled the Bergen County, N.J., businessman and philanthropist in its May 1 addition, it was the Rebbe, Rabbi Menachem M. Schneerson, of righteous memory, who convinced the businessman to not give up, despite the misgivings of a food authority who said that Mintz was chasing a pipe dream.

"He gave me a roadmap for what to do," Mintz, who serves as president of Lubavitch on the Palisades in Tenafly, told the paper. "Everything bad, he told me, is a blessing in disguise. Think positive." ...
