Personal Fish Dish


  • 2 Bronzini Fish
  • (optional) 2 Dorado fish
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ bunch scallions
  • Herbs of your choice (dill, cilantro, parsley, basil)


  • ½ cup honey
  • ½ cup dry white wine
  • 1 teaspoon powdered mustard
  • ¼ cup freshly squeezed lemon juice
  • 1 tablespoon lemon rind
  • 4 cloves garlic minced


  • Instruct your fish merchant to open the fish like a book, remove the bones and leave the skin on.
  • Coat a glass or pyrex dish with oil
  • Place fish in the dish and sprinkle the fish with white salt and pepper, inside and out
  • Add scallions and herbs to the center
  • Whisk together the rest of the ingredients and pour in the cavity and over the fish
  • Allow to marinate
  • Bake uncovered for 15-20 minutes
