Personal Fish Dish
Ingredients:
- 2 Bronzini Fish
- (optional) 2 Dorado fish
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ bunch scallions
- Herbs of your choice (dill, cilantro, parsley, basil)
Dressing:
- ½ cup honey
- ½ cup dry white wine
- 1 teaspoon powdered mustard
- ¼ cup freshly squeezed lemon juice
- 1 tablespoon lemon rind
- 4 cloves garlic minced
Directions:
- Instruct your fish merchant to open the fish like a book, remove the bones and leave the skin on.
- Coat a glass or pyrex dish with oil
- Place fish in the dish and sprinkle the fish with white salt and pepper, inside and out
- Add scallions and herbs to the center
- Whisk together the rest of the ingredients and pour in the cavity and over the fish
- Allow to marinate
- Bake uncovered for 15-20 minutes
