Cheesy Quinoa Latkes

• 2 2/3 cups cooked quinoa
• 4 large eggs, beaten
• ½ tsp. salt
• ¼ tsp. pepper
• 2 tbsp. chopped parsley
• 2 tbsp. chopped basil
• ½ small onion, finely chopped
• 1/3 cup parmesan or shredded cheese
• 3 cloves garlic, minced
• ¾ cup breadcrumbs or raw oats
• Oil for frying


Combine the quinoa, eggs, salt, and pepper in a large bowl. Stir in the onion, cheese, and garlic. Stir in the breadcrumbs or raw oats. Let the mixture sit for a few minutes so the crumbs or oats absorb some of the moisture. Form the Latkes and fry on medium heat for 5 to 7 minutes each side.
