Ingredients:
- ½ cup + 2 tbsp. oil
- 1 1/4 cups sugar
- 4 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups flour
- 3/4 cup cocoa powder
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup milk (dairy or non-dairy)
Frosting Ingredients:
- 2 cups confectioners sugar
- 2 tbsp. butter, margarine or coconut oil, softened
- 2 tbsp. milk (dairy or non-dairy)
- 1 tsp. vanilla
To Decorate:
- Yellow jellybeans (or other yellow candy)
- Green soursticks (or other long green candy)
Directions:
- Mix the oil, sugar, eggs and vanilla.
- Slowly mix in the flour, cocoa powder, salt and milk until batter is smooth.
- Spoon the batter into cupcake wrappers. Bake on 350°F for 20-25 minutes.
- Place all frosting ingredients in a bowl. Beat on medium speed until soft and fluffy.
- When the cupcakes are fully cooled, frost each one and top them with a yellow jelly bean for the etrog, and the green sourstick pieces for a lulav. Eat and enjoy!
