Ingredients:

  • ½ cup + 2 tbsp. oil
  • 1 1/4 cups sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups flour
  • 3/4 cup cocoa powder
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk (dairy or non-dairy)

Frosting Ingredients:

  • 2 cups confectioners sugar
  • 2 tbsp. butter, margarine or coconut oil, softened
  • 2 tbsp. milk (dairy or non-dairy)
  • 1 tsp. vanilla

To Decorate:

  • Yellow jellybeans (or other yellow candy)
  • Green soursticks (or other long green candy)

Directions:

  1. Mix the oil, sugar, eggs and vanilla.
  2. Slowly mix in the flour, cocoa powder, salt and milk until batter is smooth.
  3. Spoon the batter into cupcake wrappers. Bake on 350°F for 20-25 minutes.
  4. Place all frosting ingredients in a bowl. Beat on medium speed until soft and fluffy.
  5. When the cupcakes are fully cooled, frost each one and top them with a yellow jelly bean for the etrog, and the green sourstick pieces for a lulav. Eat and enjoy!
