On the 14th of the Jewish month of Iyar, one month after the holiday of Passover, we celebrate Pesach Sheni–a “second Passover.” It’s customary to eat matzah on this day, but unlike on Passover, we don’t need to stay away from chametz.
Here’s one fun way to eat the Pesach Sheni matzah. It's delicious year-round, too.

Ingredients
- 2 cups chocolate ice cream
- 2 cups vanilla chocolate chip or mint chocolate chip ice cream
- 3 matzahs
- 1 cup chocolate chips
- 2 tbsp. butter
Directions
- Put the butter and chocolate chips in a microwave-safe bowl. Microwave for 1 minute. Take out, mix and return to microwave. Repeat until the chocolate chips are fully melted.
- Lay out the pieces of matzah and spread chocolate mixture over one side. Put the matzahs in the freezer for 5 minutes for the chocolate to set.
- Scoop one flavor of ice cream and place in neat rows on the first piece of matzah. Gently place the second piece of matzah on top. Line up scoops of the second flavor ice cream on top of the second piece of matzah. Place the third piece of matzah on top and put the entire sandwich in the freezer for about 30 minutes.
- Cut into pieces, serve and enjoy.
