Good-Carb, Healthy-Fat, and Sugar-Free


When I was diagnosed with type 1 (insulin dependent) diabetes, I was already married and had a family. Like most families, we had our eating and cooking habits. Now I was faced with what seemed like a whole new set of rules.

I was pretty handy in the kitchen, however, my kitchen savvy was pretty conventional. But because I had been fighting "the battle of the bulge" all my life, I knew a bit more about cooking dietetic foods than most people. And the more I learned about nutrition and diabetes, the more I came to realize that the diabetes epidemic is actually an outgrowth of a far deeper and very serious medical and social issue: obesity and an unhealthy lifestyle.

In Deuteronomy it is written, "You shall be very careful of yourselves," (4:15) a simple translation is; we are obligated to take good care of our health and our well-being. It is now becoming more and more clear that it is not only those with actual health problems who have to change their cooking and eating habits. Everyone should see if they could make improvements!

Holidays are an integral part of Jewish life. And much of this time, especially during Passover, is spent sitting down together at festive holiday meals. These meals, along with what we are required to eat during the Seder, entail a serious change in the foods, quantities and times we are used to eating.

Surprisingly though, eating healthy foods and feeling good on Passover are not so difficult. These recipes will make it easy for you to enjoy the Festival along with everyone else. With a little bit of advance preparation, you can enjoy Passover to the fullest, while eating delicious foods that are low-carb, low-fat and sugar free! Enjoy!

Smoothie
The smoothie calls for soy... soy is not kosher for Passover.

vegetarian passover meal
Several years ago my brother, a vegan, joined us for pesach. Our joy to have him was challenged by feeding him according to pesach rules and his complete vegetarian diet. I made a very substantial eggplant ratatouille with tomatoes, onions,peppers, zuchinni, eggplant, garlic and many spices. I also made grilled marinated portobello mushrooms and mushrooms stuffed with farfel and spinach, well seasoned. And a vegetarian tzimmes made with sweet potatos, carrots, prunes and dried fruit. My many other guests had a hard time deciding what to eat- the main meat courses or my brother's lovely dishes!!!

passover recipes
i was really hoping to see at least 1 main course type vegetarian meal. Passover presents a special challenge to vegetarians, ie those of us who do not eat any type of meat or fish or eggs. our main sources of protein, ie tofu and beans are off limits at passover.
