Onion Soup


Serves 6–8

  • ¼ cup oil or butter
  • 5 large onions, diced
  • 2 tsp. salt
  • 1 tsp. sugar
  • ½ tsp. pepper
  • 2 t. potato starch
  • 4 t. cold water
  • 11 cups water
  • ½ cup dry or semi-dry white wine
  • 3 t. onion soup mix

Method

In a large frying pan, heat the oil or butter over a medium flame. Add the onions and sauté them for 15–20 minutes. Add the salt, sugar, and pepper. Dissolve the potato starch in the water. Add this to the pot and stir immediately. Add the wine and soup mix and simmer the soup for 2 hours.
