Strawberry Ice Cream


Serves 6–8

  • ¾ cup fresh strawberries, pureed
  • 6 eggs, separated
  • 1 cup sugar
  • ½ cup oil
  • 1 package vanilla sugar


Method

Puree the strawberries with an immersion blender and set them aside. Beat the egg whites until they are stiff; gradually add the sugar. In a separate bowl, beat the yolks together with the oil until they are thick, adding the vanilla sugar and pureed strawberries while continuing to beat the mixture. With a spatula, fold the egg whites into the yolk mixture and freeze.

VARIATION:

Add one ripe banana to the strawberries when pureeing, for a strawberry-banana flavor.

Vanilla sugar
Each year I put a fresh vanilla pod in 1kg of sugar before the end of Pesach, and put it away for the next year. It is excellent. It is easy to make vanilla essence for pesach by splitting 2 vanilla beans and putting them in a bottle of good brandy. I do it all year around, and make a special batch for pesach as well.

Vanilla Sugar
I use 6-8 cups of sugar with the vanilla bean in a tight sealing container. The vanilla beans can be purchased at Natures Food Patch on Cleveland St

Frozen Strawberries
We don't use fresh strawberries because of the bug issue. Has anyone tried this with frozen strawberries
