Mushroom Quiche


  • 2 t. oil
  • 2 large onions, sliced
  • 1 cup canned or fresh mushrooms
  • ¼ tsp. nutmeg, optional
  • ¼ tsp. curry, optional
  • ¼ tsp. black pepper
  • ½ tsp. salt
  • 1 tsp. garlic powder
  • 4 eggs
  • 1¼ cups grated cheese of any kind
  • 1 cup cottage cheese or cream cheese

Method

Preheat the oven to 350˚F / 180˚C .

Heat the oil in a large frying pan over a medium flame. Add the onions and sauté them until they are light brown. Add the mushrooms, nutmeg, curry, pepper, salt, and garlic powder and cook it a few more minutes, stirring every few minutes. Beat the eggs lightly and add them to the mushroom mixture. Add half of the grated cheese and all of the cottage cheese and mix well. Then pour it out into a pie pan. Top with the remaining grated cheese and bake, uncovered for 45 minutes, until the top is light brown and the quiche is firm.
