Lemon Ice Cream


Serves 8

  • 6–7 eggs, separated
  • 1 cup sugar
  • ½ cup oil
  • 1 tsp. grated lemon peel
  • 1 tsp. vanilla
  • ½ cup coconut, optional

Method

Beat the egg whites until stiff. Gradually add the sugar. In a separate bowl, beat the yolks together with the oil until they are thick and then add in the lemon peel and vanilla. With a spatula, fold the egg whites into the yolk mixture and sprinkle in the coconut. Freeze.

Missing Lemon Juice
You're right and thank you for pointing it out to me.
Add in 2-3 tablespoons of fresh lemon juice to the yolk mixture before folding it together.

As to the egg comments,that's Pesach. Lots of eggs. For those who don't want to use them, make fruit ices instead. Got lots of such recipes in my cookbook Pesch-Anything's Possible!

about yolks
you can make ices without yolks but to get that creamy ice cream taste you do need the yolks
