Cauliflower Latkes I


  • 2 cups cauliflower, cooked
  • 2 tablespoons matzo meal
  • 2 eggs
  • Salt and pepper

Chop cauliflower and combine with rest of ingredients. Form into latkes, and fry.

For Chanukah - Fried cauliflower
A favorite for holidays!!!

Break cauliflower into flowerettes (not too small)

Steam for a few minutes (do not over-cook!)

Beat 2-3 eggs, add whatever seasonings you like (salt, garlic powder, pepper, paprika, parsley, dill ...)

When flowerettes are cool to handle, roll in egg batter, then roll in bread crumbs (for Pesach, use matzo meal), fry in hot olive oil until golden brown.

Absolutely loved by all who eat this treat!
