Luscious Lemon Ice Cream

Low Carb, Low Fat

Yield: 8 servings

  • 1 (4-ounce) container light whipped topping
  • 4 egg whites
  • 2 eggs, separated
  • sugar substitute equal to 1 cup sugar, divided
  • 1/4 cup lemon juice

Beat whipped topping until stiff. In a separate bowl, beat egg whites together with half of sugar substitute. In another bowl, beat egg yolks with other half of sugar substitute. When thick, fold in lemon juice. Fold all 3 mixtures together until well-blended. Freeze.

Pistachio variation:
For a delectable pistachio-flavored ice cream, omit the lemon juice and add 1 teaspoon almond extract, ⅓ cup chopped pistachios, and 2-3 drops of green food coloring.

Coffee variation:
Omit lemon juice and add 2 tablespoons coffee, dissolved with a few drops of boiling water and 1 teaspoon vanilla extract.

egg whites and whip
There is kosher for passover whip in the states but not the light, with a very good rabbinic supervision--in israel (it is chug chatam sofer petah tikva)

As far as salmonella worry each person needs to decide for himself---I have not seen pasturized egg whites kosher for passover this year---they were available when the bird flu scare was around

Whipped topping
I am still a little unclear from your reply---can whipped topping be used as a substitute for the raw eggs in the lemon ice cream? (I am willing to use prepared/processed Kosher for Pesach foods.)

Whip and eggs for ice cream
There is kosher for Passover whip in the US and Israel--but many people manage without it

That of course means using raw eggs for a creamy ice cream--with the Bird Flu a few years ago there was fear of using raw eggs and of course Salmonella--there are those that feel that using lemon juice can help destroy any germs but that is an individual preference---I have found this satisfactory

One can also make lovely sherberts without any eggs making a syrup from sugar and water blending with the fruit and/or juice of choice and freezing and blending a number of times--we do the same with sweeteners and or sugar/sweetener combo for those that wish and/or need to cut down on the sugar---we have some lovely recipes in EnLITEned and they will be posted at: www.jewishdiabetes.org

Salmonella concern
Is there a concern about Salmonella with the use of raw egg yolk/white? Can anything be done to minimize this risk? I have not seen pasturized kosher for passover egg whites.
