simanim salad
I could not find any pomegranates this year. I bought some Pom juice(OU) and used that instead of the vinegar. I actually put in about twice as much juice as was called for(4 tsp). The dressing came out a most beautiful color and it tasted delicious!

another simple salad:
Grated raw carrots dotted with pomegranate seeds
and your seasonal dressing - according to your traditions - or no dressing at all
It's easy to chew for those with difficulty chewing

There is a custom not to use vinegar or other spicy/sharp foods on Rosh Hashanah such as garlic, horseradish, etc. Therefore, when preparing for Rosh Hashanah (it is a great salad any time of the year!) simply omit the vinegar, and the recipe still comes out delicious.

Is there a substitute for vinegar in the dressing? I recall hearing something about not using vinegar on Rosh Hashana
