Easy Kosher for Passover Almond Cookies

Last week's almond butter recipe was in preparation for this easy, 4-ingredient, gluten-free, kosher-for-Passover cookie.

The best part about these is how easy they are and how well they freeze.

If you want to fancy 'em up, you can melt some chocolate and drizzle it over.



  1. Pour the almond butter and sugar into a bowl and mix. Add the egg and the salt, and mix.
  2. Use a 1 tablespoon measuring spoon to scoop out even-sized balls of dough. Roll them gently and place on inch apart on a parchment paper lined baking sheet. Gently press down with a fork to flatten the dough.
  3. Bake at 350° F (180° C) for 10-12 minutes.

NOTE: The cookies will be extremely soft when they come out of the oven. If you try to move them, they will fall apart. Wait for them to cool fully before removing from the pan. Once cool, they will hold together properly.

Yields: 15 cookies

Freezes well.

Hi Aden,

You can use an extra light olive oil, but I wouldn't use a strong-tasting one. Reply

boiled sugar No, this wouldn't work with boiled sugar. The sugar adds to the structure and texture here. Reply

What you can do is boil the liquid sugar (on Pesach) till all the water evaporates and it returns to its granulated consistency. Not sure if it's worth the work though... Reply

Mr. Vorst,
As you'll see in the article, the recipe ingredients are listed, and there is no flour in the recipe. One can form a cookie-like confection from the almond butter, sugar, eggs, and salt. In fact there are many 'cookie' recipes that don't contain flour, and even cake recipes, too. Enjoy your chag Reply

To Mr. Vorst Respectfully, the absence of flour is what makes these kosher for Passover, were they to have flour they would be considered chameitz. Reply
