Apple Noodle Kugel for Rosh Hashanah


We’re now in the Jewish month of Elul, which means Rosh Hashanah is fast approaching—just 3 weeks to go! And this sweet apple-noodle kugel definitely belongs on your menus.

Kugel is one of those traditional Ashkenazic dishes which makes some people roll their eyes, but without which others can’t imagine a holiday or Shabbat meal. Sweet noodle kugel with raisins is quite popular, but this Rosh Hashanah version has apples and a cinnamon crumb topping.

There’s genuinely nothing difficult or complicated about it. Cook the noodles, grate the apples, mix in the rest of the ingredients, sprinkle the topping over it and bake for an hour. I used a round springform pan, but you can use a square or rectangle too.

It’s a good idea to line your pan with baking paper if you’re not using a springform, so the kugel doesn’t stick to the sides. Also be careful not to cover it while it’s still hot. Let it cool fully. Otherwise the crumb topping will get soggy.

Note: You could definitely add raisins to this, if you like!

Kugel Ingredients:

  • 12 oz. fine egg noodles
  • ¼ cup oil
  • 6 apples, peeled
  • 6 eggs
  • ¾ cup sugar
  • 1½ tsp. cinnamon
  • 1½ tsp. kosher salt

Topping Ingredients:

  • ½ cup cornflake crumbs
  • ½ cup sugar
  • 1½ tsp. cinnamon


  1. Cook and drain the noodles, and mix in the oil.
  2. Grate the apples and squeeze gently to drain the liquid.
  3. Add the eggs, sugar, cinnamon and salt to the apple mixture. Then add the mixture to the noodles. Stir to combine.
  4. Pour mixture into a 9″ × 13″ baking pan or a round springform pan. If you’re not using a springform, line the pan with baking paper.
  5. Mix the crumb topping in a small bowl and sprinkle over the kugel. Bake covered at 350° F for 50 minutes, then uncovered for another 10 minutes. Remove from oven and let kugel cool completely before covering, to prevent the topping from getting soggy.
  6. Serve warm or at room temperature.

I wouldn't freeze it, but you could make it ahead and refrigerate. Then warm it in the oven when you're ready to serve. Reply

When to make the apple kugel Hi Miriam,
Me again. No need to deliver the kugel my son is coming home this weekend and we will have an early Rosh Hashanah dinner Saturday night. I have a million things to bake and make. Going overboard for a change. Ess, ess. Can this kugel be frozen? It's probably much better fresh. Can it be made a day ahead? I'm assuming it's best right out of the oven. Shana Tova,

Thank you Miriam Thank you so much for getting back to me so quickly. I know you have a million things going on at once! I have this need to feed vicariously as I am on Weight Watchers.(again). I am sending a Rosh Hashanah care package to my skinny son and his equally skinny non-Jewish roommate. I use every occasion, Jewish and secular. What can I say I'm the Jewish mother of an only child that happens to be a son, I'm a walking punch line. This kugel sounds way to good to wait for him to come home or for us to go up. I think I'll make it for my husband. Who am I kidding? I'll be in it with a fork while it's still hot!Just donated 5 big trash bags full of old clothes. Time to realize those size 6 jeans are never going over these thighs again in this lifetime. Reply

I don't think I would send this in the mail. It really needs to be refrigerated. Maybe save it for when you can bring it yourself. It would be fine in a two hour car ride. The challah should be fine though. Reply

I would love to send this to my son in college about 2 hours away. If I sent it overnight do you think it would make it? If you think it might how would be be best to wrap it? Foil, plastic,box, or airtight container? Or is it totally meshuguna? I will be sending him a homemade challah too? Reply

Cooking apples like Granny Smith apples are quite tart and also tend to keep their shape when cooked. Eating apples like Jonathan apples are sweet and tend to turn to mush when cooked.

If I make an apple pie with Delicious apples or Golden Transparents, I use about half as much sugar as i would have if I had used Granny Smiths or Bramleys. Reply

apples I'm not sure what you're referring to as cooking apples - there are many varieties that are good for cooking. What I used would probably be considered medium-sized. Reply

Cooking apples or eating apples? I would guess they are medium-sized eating apples from the amount of sugar used, but it would be nice to know. Reply
