I discovered this recipe completely by mistake. I was tinkering in the kitchen when I found some ingredients and decided to throw them together. This is what resulted. I named this recipe Italian Flag Salad because it uses all the colors of the Italian flag (red, green, and white).
- 1/4 cup Parmesan cheese, grated
- 1 pound cherry tomatoes, cut in half
- 1/2 cup of chopped parsley
- 1 tablespoon olive oil
- Salt and pepper to taste
- 7 sun-dried tomatoes (optional, but I find that it gives the salad a little extra zing)
Mix all ingredients and enjoy!
