Mock Chopped Liver

Mock Chopped Liver



  • 1 onion, diced
  • 1 can mushrooms, sliced
  • 3 medium eggplants
  • Salt and black pepper, to taste


Pierce eggplants several times with a fork. Bake at 400*F for 1 1/2 hours.

Sauté onions until golden brown. Add mushrooms and continue to sauté. Scoop out inside of eggplant and mix with onions and mushrooms. Blend with a hand blender or food processor. Freezes well.

I'm a vegetarian. This tried and tested delicious recipe also suits Pesach.

5 hard boiled eggs
1 cup walnuts
1 onion
Vegetable oil
Salt and pepper

Saute the onions until a light brown and soft in vegetable oil.
Put the eggs, walnuts, and onion in food processor, making sure all the remaining oil and bits from the frying pan is added too.
Whizz the processor until you like the texture.
Add salt and pepper to taste.

During Pesach I have to make at least 2 batches of this. My son loves it Reply

Funny you should mention it...we were just talking about mock chopped liver the other night. i remember my step fathers sister used to make it and she made it with green beans. my mother who used to make the best original chopped liver used to rave about this recipe with green beans. i don't have the recipe. if you find it would you please send it. thanks... mock chopped liver with ritz crackers my mother used to make a fake chopped liver I think with ritz crackers and possibly canned string beans(not really sure about the string beans). anyone know anything about this - obviously this version is not for passover Reply
