Spicy Red Lentil Soup


Simple to make!

  • 1 medium onion
  • 3 carrots
  • 2-3 white potatoes
  • 1 cup red lentils [soaked for 1 hour]
  • 1 teaspoon sweet paprika
  • 1 teaspoon turmeric
  • ½ teaspoon hot paprika [if you like it really hot add 1 teaspoon]
  • 1 bay leaf
  • ¼ cup vinegar
  • 2 tablespoons tomato paste
  • salt and pepper

Combine all the ingredients and seasonings in an 8 cup pot. Bring to a boil and then simmer for 45 minutes or until all the vegetables and lentils are soft.

water in soup
Recipe calls for using an 8 cup pot. Add ingredients and fill with water. Enjoy1

sounds delicious& found it particularly interestin
that vinegar is in the recipe... also, yes, wondering how much liquid (water?) to use in addition to vinegar.. p.s red lentils cook quickly and are a wonderful source of fiber ( all lentils are...). thank you...
