Green Lentil Soup

So easy to prepare!

  • 2/3 cup green lentils [that were pre-soaked for 1 hour]
  • 2 large onions cut in rings
  • salt
  • pepper
  • garlic powder
  • 1 teaspoon turmeric
  • 2 tablespoon soy sauce

In an 8 cup pot, bring lentils to a boil and simmer until cooked, approximately ½ - ¾ hour.

While the lentils are cooking fry onion until slightly brown. Add salt, pepper and garlic powder to taste. Add turmeric and soy sauce. Stir well.

When lentils are soft, add seasoned fried onions and a few cups of water.

For best taste, make soup a couple of hours early and reboil before serving.
