Something Healthy to Eat

Let food be your medicine and medicine be your food! Our cuisine needs updating as many preventable illnesses such as high blood pressure and high cholesterol are attributed to diet. Adult onset diabetes is known as "the Jewish disease".

Like all cultures, we get in trouble by eating too much and too much of the wrong ingredients, especially on Shabbat and holidays. I was able to reverse my husband's high cholesterol to excellent without medication by changing ingredients, proportions and methods of preparation in well loved, everyday foods.

I compiled the recipes into a cookbook, Something Healthy to Eat. My recipes are very easy, healthy, cost effective, figure friendly, plain but fancy and they are quick to prepare which reduces stress for Shabbos and Yom Tov meals. The preparation enables the homemaker (especially the bride) to enjoy Shabbat, holiday and everyday meals in a relaxed manner.

Yogurt Cheese
This is also fun to make yourself. Make your own cheese overnight. Spread on toast or bagel in the morning. Goes especially well with raisin toast.
Berry Yogurt Parfait
Yogurt is a super food that contains beneficial bacteria and calcium. It is so easy to flavor. Just layer fruits of your choice and sweetener to fat free plain yogurt. It is nice to sprinkle a half cup of Granola (pg. 18) on top.
Israeli Salad
This salad is very popular in Israel. It is served in a pita pocket sandwich with fried chick pea balls (“falafel”) or with lamb or turkey (“shwarma”). The salad is also served with the shwarma that is not in a sandwich. The meat is cooked on a spit with wonderful spices.
Cauliflower Salad
Cauliflower is a cruciferous vegetable that is good for preventing cancer. It is high in fiber and extremely nutritious. This makes a great main dish, especially in warm weather.
Bread Pudding
Hank’s mother called this “Apple Betty” or “Brown Betty”. Hank’s favorite. Good for breakfast and dessert too.
Cream of Tomato Soup
An easy first course for Shabbos and Yom Tov. Everybody is surprised how quick this gourmet soup is to prepare. Make this in five minutes. A delicious way to get the benefits of tomatoes. Lots of lycopene. Beneficial for prostate and breast health.
Fat Free Plain and Fancy Cheesecake
Everybody raves about this elaborate, seemingly difficult cheese cake. It’s easy. It’s like pouring a smoothie over store bought cut up cake. This cake tastes like the usual high calorie, high fat and cholesterol laden traditional New York cheesecake – the kind I used to make with heavy cream, full fat cream cheese and five whole eggs. Make it, get compliments and don’t feel guilty. It’s fat free and full of protein! This will be become one of your easy favorites to prepare, especially for Shavuos.
Plain and Fancy Tea Cake
This is my cake that won a prize for “Cutting the Calories” on the “Good Morning America” program. Mrs. Helen Nichols of Nahant, Massachusetts gave me the original recipe in 1962. Her recipe was a sour cream coffee cake made with a stick of butter, whole eggs and one cup of full fat sour cream.
