Broccoli Potato Kugel



  • 4 potatoes, shredded
  • 4 carrots, shredded
  • 2 lb. frozen chopped broccoli, thawed and drained
  • 5 eggs
  • 3/4 C. mayonnaise
  • 2 T. onion flakes
  • 1 T. salt


Beat eggs. Add mayonnaise, salt, and onion flakes. Add all vegetables to beaten egg mixture and pour into greased baking dish. Bake at 350*F uncovered for about 45 minutes.

Potatoe types for kugel would this recipe work just as well if i were to use 2 regular potatoes and 2 sweet potatoes? Reply

These were very good. I used huge potatoes and carrots so I added an extra egg, 1/4 cup mayo, 1 tblsp salt. It made one 9x13 pan kugel and about 18 latkes. I used spray to fry them. They were a big hit. Thanks for the idea! Reply

I like the applesause/yogurt substitute instead of mayo. I'd substitute fresh zucchini, possibly fresh cut up french green beens, and shiite mushrooms with the pototo and carrots instead of the broccoli...which I think of as "bulky" Reply

possible substitution what about using applesauce mixed with plain yogurt instead of the mayo? I've used applesauce before to substitute for oils in recipes, and maybe yogurt would help make it a similar texture, just and idea. Reply
