Coconut Balls


  • 1/2 C. raisins
  • 3/4 C. walnuts
  • 1/2 C. dried dates, pitted
  • 1/2 C. dried apricots
  • 2 T. orange juice
  • 1 tsp. zest of one orange
  • 1 small bag unsweetened shredded coconut

In a food processor, process raisins, walnuts, dates and apricots for 1-2 minutes or until finely chopped. Add juice and zest and blend for 1-2 minutes more. Chill mixture in refrigerator for 15 minutes. Dampen hands, form mixture into balls, and roll them in coconut. Store balls in refrigerator.
