Potato-Beet Latkes

  • 3 T. olive oil
  • 1 small onion, pureed
  • 2 eggs, beaten
  • 3 potatoes, shredded
  • 2 medium beets, boiled or microwaved, drained and shredded
  • 1/2 C. ground walnuts
  • 1/2 C. oat bran
  • 1 tsp. salt
  • 1/4 tsp. pepper

Mix all ingredients well. Heat olive oil in a pan. Drop mixture by spoonfuls into pan. Brown well on both sides.
