3 eggs
1/2 cup sugar
1/2 cup oil
1 cup honey
3 1/2 cups sifted flour
1 teaspoon baking soda

In a mixer, beat eggs, sugar, oil and honey for seven minutes. Gradually add the sifted flour and the baking soda. Let it rest in the refrigerator for 12 hours. Pre-heat the oven to 350. Smear a little bit of flour onto your hands and shape the dough into balls. Flatten the balls a little bit and put them in the oven to bake for 15 minutes on a greased and floured pan.

honey cookies
My mixture came out like a batter, so I had to spoon it onto a baking tray. The cookies did not come out like a biscuit, but more like a fatless sponge cake which was a little disappointing. Maybe if I had rested the mixture longer in the fridge they may have been different, but I am not so sure.

Honey Cookies
I found baking these as the recipe calls for to be more like a bread than a cookie. However, I tried not beating so long, refridgerating the dough, and only baking for 5 minutes and they are a little more like a cookie.
